Ingredients:
- 1 cup (230g) unsalted butter
- 1/2 cup (100g) brown sugar
- 1 tsp vanilla extract
- 3 cups (240g) old-fashioned oats
- 1 cup (170g) semi-sweet chocolate chips
- 1/2 cup (125g) peanut butter (or almond butter)
Instructions:
- Grease a 9×9-inch or 8×8-inch square pan and line with parchment paper.
- Melt the butter and brown sugar in a medium saucepan over medium heat, stirring until smooth.
- Stir in the vanilla extract and oats. Cook for about 2-3 minutes, allowing the oats to slightly toast and absorb the mixture.
- Press about 2/3 of the oat mixture into the bottom of the prepared pan to form a base layer.
- In a microwave-safe bowl, melt the chocolate chips and peanut butter together in 30-second increments, stirring until smooth.
- Pour the chocolate-peanut butter mixture over the oat layer in the pan and spread evenly.
- Sprinkle the remaining oat mixture on top and gently press it down.
- Refrigerate for about 2-3 hours until firm.
- Once set, cut into bars and enjoy!
Tip:
For added texture and crunch, mix in 1/4 cup of chopped nuts or shredded coconut to the oat mixture! You can also sprinkle a pinch of sea salt on top of the chocolate layer for a salty-sweet flavor boost.
