Easy Marshmallow Rice Krispie Treats

Ingredients:

  • 6 cups Rice Krispie cereal
  • 4 cups mini marshmallows (or 10 oz. regular marshmallows)
  • 3 tbsp unsalted butter
  • Optional: 1/2 tsp vanilla extract for extra flavor

Instructions:

  1. Grease a 9×13-inch pan with butter or cooking spray and set aside.
  2. In a large pot, melt the butter over low heat.
  3. Add the marshmallows to the pot and stir constantly until completely melted.
  4. Remove from heat and stir in the vanilla extract (if using).
  5. Gently fold in the Rice Krispies cereal until fully coated with the marshmallow mixture.
  6. Transfer the mixture to the prepared pan and press down lightly with a greased spatula or wax paper to level it.
  7. Let cool for about 30 minutes before cutting into squares.

Tip:

For extra gooey treats, I make sure to save 1 cup of mini marshmallows and fold them in at the end (after melting the marshmallows and stirring in the cereal). They’ll remain slightly unmelted, adding a soft, gooey bite throughout the treats!
