Ingredients:
- 6 cups Rice Krispie cereal
- 4 cups mini marshmallows (or 10 oz. regular marshmallows)
- 3 tbsp unsalted butter
- Optional: 1/2 tsp vanilla extract for extra flavor
Instructions:
- Grease a 9×13-inch pan with butter or cooking spray and set aside.
- In a large pot, melt the butter over low heat.
- Add the marshmallows to the pot and stir constantly until completely melted.
- Remove from heat and stir in the vanilla extract (if using).
- Gently fold in the Rice Krispies cereal until fully coated with the marshmallow mixture.
- Transfer the mixture to the prepared pan and press down lightly with a greased spatula or wax paper to level it.
- Let cool for about 30 minutes before cutting into squares.
Tip:
For extra gooey treats, I make sure to save 1 cup of mini marshmallows and fold them in at the end (after melting the marshmallows and stirring in the cereal). They’ll remain slightly unmelted, adding a soft, gooey bite throughout the treats!
